Lmaooo…I mean, I love my veggies and all and have a ton at every meal, but I just don't like the sweetness of fruit even juice! Basically, what you want to do here is puree the kiwis, a bit of lime juice and some mint together at the same time in a Magic Bullet or blender until they're nice and smooth, then strain the fruit puree through a fine mesh sieve to get rid of the seeds and as much of the pulp as possible.

It will be almost syrupy in texture and you might think you're good to just mix it with the sparkling water and go from there, but trust me, you will have to sweeten it just a bit. That's where the simple syrup comes in. Boil some water, mix it with equal parts sugar eg 1 cup water and 1 cup sugar and then mix that with the kiwi-mint mixture. I love kiwis and all, but when they're concentrated like that they can be really tart and kinda sour, especially when mixed with the lime juice.

So you gotta have some simple syrup on hand as well as sparkling water or soda water to tone down all the tangy flavours and make them delicious. From there, add your vodka. And yes, we are using vodka in these mojitos not because I'm trying to be trendy, but because honestly I hate rum and vodka has more of a subtle, flavourless taste. And I honestly think it blends better with the kiwi, even though rum suits lime juice nicely. This may or may not have to do with the fact that rum was my go-to drink in high school hey, we drink what our parents keep in the liquor cabinet okay?

All you need now is a pile of crushed ice and some extra kiwi and lime slices and you've got yourself one of my favourite new summer drinks. I love making the kiwi, lime and mint puree ahead of time you could do it up to 2 days ahead and then adding it to some ice-filled glasses and topping with soda water.
